Jean-Baptiste Lavergne-Morazzani, Gault&Millau d'Or 2027, Paris Île-de-France
The chef of La Table du 11 in Versailles received the highest honor from the Gault&Millau Tour Paris Île-de-France on Monday, September 7, 2026, at the Orangerie d'Auteuil.
It was in the elegant setting of the Orangerie d’Auteuil that Gault&Millau unveiled its list of top restaurants in the Île-de-France region before culinary professionals gathered for the occasion, with Jean-François Piège serving as the event’s patron. Among the day’s winners, one name stood out above the rest: Jean-Baptiste Lavergne-Morazzani, chef at La Table du 11 in Versailles (3 toques), now the 2027 Gault&Millau d’Or recipient. Flavien Dumont, representing Charvet, alongside Philippe Laruelle for De Buyer, had the honor of presenting the trophy to the Versailles-based chef.
A Family Venture That Has Become an Institution
The chef reflects on how far they’ve come since the opening of La Table du 11 in February 2015, which he launched with his father. “It was a great family project, and I never imagined we’d be where we are today twelve years later, ” he confides. He attributes this success to the loyalty of his teams, including his director, who has been with him for ten years, and his sous chef Mathieu, who has been by his side for nine years. He says he is “very flattered” by this title and “very proud” of those who have been with him from the start.
A More Confident Culinary Style
Twelve years of entrepreneurial adventure have also transformed his cuisine. “It’s a real source of pride to see this cuisine evolve, ” says the chef, who speaks of both personal and professional maturity. He admits that he is now “much less anxious about our culinary approach, ” preferring to be more open about what he wants to share with his team. It’s a sense of calm that, in his view, “shows on the plate.”
