Winemakers from the four corners of France present their work, from the vineyard to the cellar, and reveal their desire to break the mould. in Chiroubles, for example, Château de Javernand defends agroforestry (p. 44), while the Dois vineyard imagines cuvées without bubbles (p. 80).
