Emmanuel Kouri named Grand de Demain 2024 at the Gault&Millau Tour Bretagne
The chef at Les Jardins de Kerstéphanie in Sarzeau was named Grand de Demain at the Gault&Millau Tour Bretagne.
"It's great, I'm surprised and happy, especially for the team, because there's a lot of work behind it." Emmanuel Kouri, chef from Périgord at Les Jardins de Kerstéphanie (3 toques), was named Grand de Demain 2024, during the Gault&Millau Tour Bretagne. The event took place on Monday June 3, 2024.
The restaurant's history
Open for just six months, Les Jardins de Kerstéphanie (3 toques) is the first restaurant to be managed by its chef. Emmanuel Kouri, above all, wanted to find an ideal location before thinking about what to do next: "When I was looking for a business, I didn't know if I wanted to do gastronomy or something else, it was the location that would dictate what I was going to do with it. As it happens, the location lends itself well to doing really good [gastronomic] work," explains the chef. "The restaurant is located two kilometers as the crow flies from the sea", "there's a one-hectare park, everything is green, it's a great working environment".
The restaurant, which scored 15/20, is described by the yellow guide as a "house of character between land and sea" with "a largely vegetal inspiration of marine cuisine". For the chef, his cuisine is "almost a time for time between seafood and vegetables. On the plate, vegetables are as important as fish or shellfish".
A surprise award
The title of Grand de Demain, awarded to Emmanuel Kouri, was not at all expected, "It's the first time I've run a business, so I had to find a clientele and see if the cuisine we were offering was suitable" . I didn't want the weight of the race to be imposed on me". However, the chef remains very satisfied and honored "I'm hyper happy, especially as I've always worked in big structures, where I was before, there were ten of us in the kitchen, here for four months, there were two of us in the kitchen."
