Will Éloi Spinnler's largest restaurant open at the Austerlitz train station?
Mystery surrounds the Burgundian chef's future location: according to the latest information available, it may well be at 85 Quai d'Austerlitz.
Less than a year after the opening of his latest buffet restaurant in the Marais, Éloi Spinnler is reportedly already preparing to open a fourth location. Although no official announcement has been made, some details appear to have already leaked out.
Éloi Spinnler’s New Restaurant: What Do We Know?
After “Orgueil,” “Colère,” and “Envie,” the social media darling is already setting his sights on new ambitions. A source close to Éloi Spinnler revealed to the editorial team at Actu.fr that he is “always on the lookout for new culinary experiences ” and hard at work preparing to open “a massive buffet” spanning 700 m². Since going solo in 2022, the Young Talent has kept us accustomed to large-scale projects. As such, this extraordinary establishment demands a location worthy of what would become his largest venue.
His new venture, whose name has not yet been revealed, would thus follow in the tradition of the “deadly sins” and be located at the Austerlitz train station, joining the list of 130 future retail spaces planned as part of the rail infrastructure modernization. It would thus benefit from the high foot traffic in the neighborhood, which is undergoing a major transformation. With its mix of travelers, local residents, and workers, the Austerlitz train station is a strategic hub bustling with activity in the 13th arrondissement.
For now, his communications team and the real estate operator Altarea Commerce—which is responsible for retail developments within the Rive Gauche complex—have declined to comment on these revelations.
The final location therefore remains to be confirmed in the coming months. However, we can assume that the menu will remain true to Éloi Spinnler’s creative and resolutely committed approach. Stay tuned…
