Following the announcement of Philippe Mille's departure, Domaine Les Crayères has unveiled the identity of his replacement. He is a highly experienced chef who has worked in some of Paris's most prestigious establishments.

A few hours after the announcement of Philippe Mille's departure from Domaine Les Crayères in Reims, the identity of his replacement has been revealed. Christophe Moret, who has long worked for the Alain Ducasse group, will be responsible for writing the new pages of the estate's two restaurants.

Christophe Moret, a highly experienced chef

Originally from Orléans, Christophe Moret cut his teeth with Bruno Cirino and Jacques Maximin, before moving to Paris to join the team at Spoon Food & Wines. He then became chef at Alain Ducasse's restaurant at the Plaza Athénée for seven years, before joining Maison Lasserre and then L'Abeille at the Shangri-La in 2016.

In an official press release, the Gardinier brothers and Arnaud Valary describe Christophe Moret as "a guardian of French haute gastronomy, humble, empathetic, generous and sincere, as if he had already made the values of Domaine Les Crayères his own. In this way, he is part of the new drive to enhance and perfect the customer experience initiated this year". Christophe Moret will be responsible for rewriting the menus of Restaurant Le Parc for the gastronomic part, as well as Brasserie Le Jardin for a more relaxed style.

For his part, Philippe Mille is staying in Reims and will open his first restaurant, Arbane, in April, where he will offer his very personal vision of the Champagne region, always with great rigor, creativity and commitment. This new establishment will offer two spaces, with a glass roof and another part opening onto the open kitchen, as well as a terrace for fine weather and an intimate lounge for aperitifs and digestifs. This is a major step forward in the career of the chef, who arrived at Domaine Les Crayères over fourteen years ago. While Philippe Mille's departure is set for February 29, 2024, the exact date of Christophe Moret's arrival at the helm has yet to be announced.
