Jean Covillault takes the helm of a new ephemeral guinguette!
This is surely the address not to be missed this summer for epicureans. The young Top Chef 14 contestant returns with La Belle Tablée, a guinguette with a breathtaking view of Notre Dame.
This is not the first time the chef has been at the helm of a short-lived establishment. Earlier this year, he took the helm of Court-Bouillon, a restaurant swimming in the spirit of traditional French bouillons. For Jean Covillault, these are "his pleasure projects, which I do with passion". This time, the new setting is on the barge La Terasse Notre-Dame - L'équité, moored on the banks of the Seine. Its direct proximity to Notre-Dame de Paris will offer the curious a unique setting. For this new establishment, the chef wanted to "do something summery". The place and its cuisine are rooted in a hybrid spirit between guinguette and barbecue, where "you eat like you're at home".
An accessible, convivial space
In his new establishment, chef Jean Covillault wanted to reproduce a simple banquet-style cuisine, with a single large table seating 80. No wonder, when you remember the candidate he was, with his unfailing good humor and conviviality. For him, it's "a time for sharing and chatting with friends". His menu is resolutely affordable, starting at 36 euros. His philosophy as a chef is clear: "I'm not an artist who's going to come up with new creations, just simple things we know, well seasoned. As a chef, I think there's a lack of places where you can just eat well with your mates, with no frills". From now until mid-July, you'll be able to rediscover the atmosphere of big, beautiful tables of friends, and enjoy comfort food for all.
Starters will include classic French charcuterie boards combined with seasonal vegetables. Cold salads are also on the menu, including the chef's must-have potato salad, made with grenaille potatoes, mayonnaise, red onion, parsley and, above all, a well-seasoned dressing! The grilled dishes that follow will also be available in a vegetarian version based on halloumi and mushrooms. To accompany this, Jean Covillault has lined up a selection of light rosés, craft beers and other non-alcoholic beverages, ideal for the climate offered on the barge. Last but not least, a traditional French banquet could only end with a cheese platter and dessert cart. For those with a sweet tooth, there's peach-almond financier, chocolate cake, Breton strawberry shortbread tart and, summer obliges, fruit salad.
