This four-toque chef has created the Air France Business Class menu for flights departing from the Caribbean
Since November 1, 2026, Louis-Philippe Vigilant, chef at La Côte d’Or in Saulieu, has been creating a new gourmet dining experience for Air France Business Class passengers.
Bringing the flavors of the Caribbean to Paris while staying true to his Burgundian roots: that’s the approach Louis-Philippe Vigilant has taken for his new collaboration with Air France. The chef at La Côte d’Or (4 toques), a restaurant at Maison Bernard Loiseau in Saulieu, has created the airline’s new Business Class menu. It’s an opportunity not only to share his cuisine with travelers but also to tell, through his dishes, a personal story that bridges two regions.
A native of Martinique, Louis-Philippe Vigilant left his native island at the age of 17 to train as a chef in mainland France. His journey led him to Burgundy, where he now creates a cuisine that bridges his Caribbean roots and his attachment to the Saulieu region. This dual influence serves as the guiding thread of the menu he has designed for Air France.

Twelve Creations Blending Burgundy and the Caribbean
Developed in collaboration with Servair, the twelve dishes will be introduced gradually over the coming months. The menu features a variety of recipes centered on vegetables, fish, meat, and poultry, with special attention paid to the challenges of dining at high altitudes.
Among the announced dishes, a fish and shellfish pot-au-feu served with a Madras curry sauce and ginger-infused vegetables directly reflects the chef’s Martinican roots. Another dish showcases his adopted home: braised beef cheek, served with a Burgundy sauce and potato purée made with Cazette hazelnuts. This recipe underscores Maison Bernard Loiseau’s commitment to its local terroir and producers. This collaboration allows Louis-Philippe Vigilant to introduce his culinary world to an international audience, bringing together the two gastronomic identities that now inspire his work.
The new menu has been available since November 1, 2026, on long-haul flights to Paris-Charles-de-Gaulle departing from Pointe-à-Pitre, Fort-de-France, Saint Martin, and Cayenne. It is also available on select regional routes within Air France’s Caribbean network.
