Prestige Restaurant This iconic house is slowly but surely undergoing a revolution. The pride and honor of Burgundy, it's still the luxurious inn in front of which you'd still park your Duesenberg and enjoy a carp à la Chambord. Yet, in 2023, the Loiseau family has managed to evolve this paternal and regional heritage, passing the torch of haute cuisine to Patrick Bertron, 40 years in the kitchen, and Louis-Philippe Vigilant, trained within the group and the heralded hope of a change with continuity. The two men know and appreciate each other: Patrick loves the produce of the Morvan, Louis-Philippe those of the Auxois, and their visions of a "Loiseau cuisine" that makes both the house and the terroir shine are very much aligned. For the summer season, tomatoes were in the spotlight, with fruit, herb sorbet and tomato water, after a lovely eggplant cream appetizer. Red mullet looked good, aided by zucchini and its flower, before a well-cooked sweetbread with bell pepper and artichoke, nicely underscored by a constant concern for seasonality and simple, local products enhancing the main ingredient. In the sweet department, new pastry chef Xavier Jacquin immerses himself with talent, on raspberry sorbet tarragon as on chocolate and Burgundy cazette. The wine list itself is becoming eco-responsible under the leadership of head sommelier Éric Goettelmann, with simple, symbolic gestures such as the banning of the ice bucket (in favor of double-walled decanter bottles) and the preference given to organic and biodynamic wines in the selections. The result is a remarkable cellar, as extraordinary as ever in Burgundies, rich and interesting in all vineyards.
