Prestige Restaurant Now alone at the helm of this historic establishment following Patrick Bertron's departure for a well-deserved retirement, Louis-Philippe Vigilant measures the magnitude of his necessarily exhilarating task on a daily basis. In this venerable room opening onto the interior garden, the chef has built his first cards, of respect and commitment to the service of the house, while developing his personal ideas. The whole, we all hope, will naturally assert itself and make further progress, starting from this solid base: a turbot blanc and pointed cabbage technically well framed on an irreproachable product, a pan-fried duck foie gras escalope and peach textures with verbena focused on fruit, a saddle of lamb and burnt eggplant with taggiasche olives evoking the South. The beautiful desserts by Lucile Vigilant, now promoted to head pastry chef (rhubarb blossom and meringue petals with meadowsweet and wild sorrel from Morvan and cocoa) show the way forward, between modernity and naturalness, the cellar is almost unrivalled, especially when it comes to Burgundy.
