Pastry At Sylvain Ruhlmann, high standards are everywhere: the flour from the Foricher mills is organic, the baguette is one of 170 with the Label Rouge label, the fruit and vegetables are in season, and the milk comes from a local producer. At home or in the beautiful turn-of-the-century tearoom, enjoy a Ropfküeche, a brioche with hazelnuts, almonds, walnuts and cinnamon, a chocolate caramel or chocolate mango passion tartlet, or a raspberry croissant... These are just some of the creations of this pastry chef, who cut his teeth with Zimmermann in Saverne before training with Meilleur Ouvrier de France Jean-Michel Perruchon at the École Bellouet in Paris. Eco-responsibility is at the heart of the Maison's policy: waste is recovered and recycled, unsold goods are offered at lower cost with a partner association... and you'll be rewarded with a cake or pastry if you regularly bring your own container.
