He registered the concept of the mini croissant, and developed a range based on bergamot, a citrus fruit imported to Nancy and adopted. Mixed with truffles, he also offers a range of babas with Lorraine pear, mirabelle plum, rum... chocolate bars and bonbons that are widely exported.
