With a BEP in his pocket, specializing in desserts, François Josse has forged a remarkable career path, which has taken him from La Mare aux Oiseaux in Loire-Atlantique to the Rouge restaurant in Nîmes, Gard, via Chez Pic in Valence, the George V and Taillevent in Paris. A brilliant career, punctuated by a French Dessert Champion title in 2018, which propels him among the most brilliant of his generation. In 2023, he closes his restaurant career to settle with his wife Emmanuelle in Chambonas. Familha (family in Ardéchois dialect) is a condensed version of François' savoir-faire: pure butter viennoiseries, wholemeal breads made with natural leavening and organic flour, traditional baguettes and devilishly tasty pastries, including the pistachio-raspberry éclair, the almond-hazelnut and yellow lemon praline or the rhubarb, elderberry and hibiscus tart. The icing on the cake is that Familha was named Best Bakery in France in 2025. All the more reason to head for Chambonas.
