Butchery Joël Lombert is an artisan butcher of excellence who has been spearheading the art of traditional French butchery for over 40 years. Proof of this are his Bronze Medals in 2014 and 2018, Silver Medals in 2020 (although no Gold was awarded that year) and Gold Medals in 2015 and 2017, for his côte de bœuf de Chalosse. Joël Lombert shares his awards with his teams, the chevillards and the breeders who pamper their animals by letting them graze in the meadows and fattening them naturally with products from the farm. Among them, IGP Label Rouge Chalosse beef, the house specialty. And because his quest for perfection is inalienable, you'll also enjoy lamb from Limousin, pork from Perche, veal from the Pyrenees, organic meats and artisanal cured meats from our regions. "I visit breeders and artisans to confirm my choices. I like to immerse myself in real life," explains this fervent defender of taste and the excellence of French agriculture. His signature is also evident in the delicatessen range, with tasty home-cooked dishes such as gratin dauphinois with truffles.
