Butchery David Boespflug was the first Alsatian to win the title of Meilleur ouvrier de France in butchery, in 2004, and has now opened his own store in Mulhouse. The boning of whole carcasses, notably of Charolais heifers born, raised and fed on pasture, but also of Limousin lamb and silky milk-fed veal, is visible from a bay window.
