Butchery David Boespflug was the first Alsatian to be awarded the title of Meilleur Ouvrier de France Boucher (Best Butcher in France) in 2004, and has now opened his own butcher's shop in Mulhouse. The boning of whole carcasses, in particular Charolais heifers born, raised and fed on pasture, but also Limousin lamb and silky milk-fed veal, is visible from a bay window.
