Pastry Paul Gilg chose to open this patisserie in Colmar, following the success of its big sister in Munster, where the production laboratory is located, and which is reviving the reputation of local delicacies such as forêt noire, kouglof and brioche alsacienne. There are delicate entremets: chocolate/earl grey mousse, mousse/chocolate-vanilla cream cookie, and macaroons that play on contrasting flavors and colors: apricot-rosemary, strawberry, jasmine, or more traditionally caramel or chocolate.
