Virginie Taittinger and Ferdinand Pougatch have brought a certain modernity to wine-making. This extra brut is fresh and unctuous. The nose is fruity (yellow peach, mirabelle plum) with a slight chalkiness. The palate is lively. Citrus fruits abound, with a rich, slightly saline chew. Serve as an aperitif or with ceviche of pollack with oyster juice and citrus fruit
