This dashing blanc de blancs comes from four parcels in Mesnil-sur-Oger, Avize and Cramant. Fine, lively bubbles form a tenacious cordon. The nose offers an expressive framework combining freshness and roundness, carried by notes of citrus and white fruit. On the palate, initially tense, the finish is balanced and silky. Pair well with sweetbreads deglazed with pomegranate molasses and chanterelle mushrooms.

Pierre Péters

A Luxembourg family who settled in Champagne in 1840, the Peters now farm just over 20 hectares around Mesnil-sur-Oger. Planted almost exclusively with Chardonnay, the vines are spread over a number of beautiful plots, notably in Mesnil, Oger and Avize. Vinified and matured in vats, the wines undergo malolactic fermentation almost systematically, to enhance their finesse. On the vineyard side, the estate is HVE certified. Of particular note is the launch of a new cuvée Réserve Privée, developed jointly with two colleagues from other wine-growing regions (Château les Trois Croix in Fronsac and Domaine de la Jasse in Montpellier) and marketed exclusively to members of an enthusiast club on their initiative: www.vinsvip.fr. No estate sales.
