The Boever & Fils champagne house is located in Tauxières-Mutry, north of Epernay. Its entire production is made using traditional methods. Classified as a Grand Cru in Aÿ and Bouzy, most of it is sold to private individuals. In terms of viticulture, these grower-manipulators have opted for integrated farming and cultivate 4.50 hectares of 25-year-old vines, including 3 hectares of pinot noir and 1.5 hectares of chardonnay.

A blend of equal parts Chardonnay and Pinot Noir, this cuvée has a seductive personality. The nose is characterized by white fruit and fresh citrus. The palate is lively, well-balanced, racy and unctuous, while retaining its freshness. Serve with a duo of stuffed red mullet and squid, pan-fried cockles and baby greens.
