Gault&Millau's review
This family estate is located in the hills above Épernay, with a 6-hectare vineyard spread over eight villages, including Cumières and Pierry, classified as premier cru. For over forty years, the Boivins have been cultivating the three emblematic grape varieties of Champagne on plots with excellent exposure and mainly chalky and sandy-clay soils. The latter provide the minerality and roundness that give Patrick Boivin's cuvées their exceptional character. For four generations, the family has proudly practiced integrated viticulture on the hillsides, which are a Unesco World Heritage Site.
