A delicious bakery nose. The mousse is whipped up on a sweet, savory, very smooth palate with good depth, fresh richness and lovely acidity. After the apples, some juicy yellow fruit arrives (apricot, mango), while the sapidity deepens as it opens up. Perfect for petit fours.

Monial

This family-run business was founded in 2008 by Emmanuel and Agnès Calon. The wine here refers to the monks of Clairvaux, present in Colombé-le-Sec since 1194: the vintages are currently produced in a former outbuilding of the abbey. Established on clay-limestone soil, two-thirds of the vineyard is planted with Pinot Noir, the remainder with Chardonnay. The range includes several champagnes and a red coteaux-champenois. The winery is a member of the Vins d'abbayes association, and offers a self-catering cottage at the foot of the estate to help you discover the region in the best possible conditions.
