We start with a light nose of citrus and toasted notes, joined by tangerine, thyme, rosemary and ripe watermelon or even melon. The palate is airy, almost reminiscent of Chardonnay. The bubbles are dynamic and fine. Everything is about elegance and tonicity. The finish offers a flattering sweetness brought out by the dosage. Delicious with poultry curry.

Mathieu-Princet

Françoise and Michel Mathieu-Princet set up their estate in the 1960s with just one hectare of vines. Their estate, which today covers around 9 hectares, is located between the Côte des Blancs and the southern slopes of Épernay. Their daughters, Sylvie and Véronique, work on a vineyard spread over 5 communes in the appellation, 2 of which are Premier Cru. Their cuvées are generally aged on lees for up to 5 years.
