The color is straw-gold, with a sustained effervescence and the fragrance of ripe Pinot Noir. Notes of baked apple, warm brioche, candied blackcurrant and kirsch cherry combine. The palate is deep, rich, mineral and chalky, multiplying the pleasures of an intoxicating palate. Serve with confit pork belly, chard with mustard seed jus.
