The palate is fresh and greedy, with subtle yet salivating textures. Rootiness is accentuated, and country white flowers and baked apple complete this explosion of tastes and aromas. This champagne is very vinous and long on the palate. Open with a sauté of lightly spiced lobster sections with root vegetables.
