Virginie and Olivier Huot work 7 hectares of vines spread over Saint-Martin-d'Ablois, Vinay, Chavot and Monthelon, on the southern slopes of Epernay. This vineyard mainly grows Pinot Meunier and Pinot Noir. For the last 15 years, this estate has been working in sustainable agriculture and is in the process of getting the certification “Viticulture durable en Champagne”. Grassing (natural and sown) is practiced on more than 50% of the surface to enhance the soil's stability.
