Initially very discreet, the nose opens up to blackcurrant jam, crème de fruits, sandalwood and incense. On the palate, the attack is greedy, yet slender, thanks to a tonic, slender bubble that brings all its dynamism. The texture is fleshy and releases a few bitters. The aroma is discreet, but reveals itself a little on the finish, marked by strawberry and chocolate. A magret with red fruit sauce would be a perfect match.

Konrat

In Montigny-sous-Châtillon, the Konrat family’s ancestors developed viticulture across a variety of exposures and on a wide range of soil types (sand, limestone, clay, and even a vein of flint). Faustine and Marc carry on the family’s winemaking traditions while infusing them with a contemporary flair, producing an authentic gourmet champagne in which each grape variety from every plot is vinified in barrels, amphorae, demijohns, and a few stainless-steel tanks. Spanning 7 hectares of single-vineyard plots, the estate began its transition to organic farming in 2024. It is expected to receive organic certification in 2027.
