A couple of young winemakers, Faustine and Marc have revived the family's 7-hectare monocru estate in the Champagne traditions of yesteryear. On the estate, which is undergoing organic conversion, a parcel-by-parcel selection is carried out on 1 ha of sand and limestone terroirs. Respect for nature guides the entire process from vine to bottle: the vines are cultivated according to biodynamic principles, and vinification is guided by the lunar calendar. Vinified in numerous small containers, over 70% of which are oak barrels and terracotta amphorae, 30% of which are solera (perpetual reserve wines), the champagnes are lively, elegant and made for gastronomy.
