Produced from old vines on the Verzenay terroir, this great, very vinous champagne reveals a beautiful olfactory evolution on the nose of dried fruit, sweet spices, black pepper and licorice, all combined with the fleshiness of fresh orchard fruit and candied fruit. On the palate, this complex nose is followed by woody notes and candied citrus peel. Elegance and depth mark the acidic, saline finish. Pair with Bresse poularde with morel mushrooms and sweet-spice-flavored cream.

Jean Lallement et Fils
Located in Verzenay, this 4.5-hectare family estate, planted mainly with Pinot Noir and Grand Cru, produces powerful champagnes that deserve to wait several years before being enjoyed. The cuvées are produced with the highest ethical standards: no yeast for the first fermentation, no filtration, limited dosage... The standard is constantly improving, with champagnes that are certainly vinous, but with a fresh, lively finish (citrus, aniseed...). The dosage is perfect, leaving room for fruit and minerality. And always that lovely, buttery, very tactile texture, enhanced by fine, lively bubbles. Victor Lallement has joined his parents, Jean-Luc and Alexandra, on the estate.
