The crimson color sets the tone for this rosé de saignée. Made from 100% meunier grapes from the single 'l'Étau' parcel, maceration brings out all its power and finesse, with four years' ageing on the lees. A greedy nose of strawberry, redcurrant and sweet spices opens up a jubilant palate, with a concentrated, somewhat tannic and chalky chewiness. A mealtime champagne, it's the perfect accompaniment to stuffed guinea fowl or a cassolette of snails.
