Intense aromas of juicy pear, red berries and broom blossom open up a complex bouquet. The palate is equally flattering, with notes of redcurrant and wild strawberry. The creamy texture is pleasant and the dosage perfectly controlled. The wood is still slightly present with its vanilla notes, before a lovely acidic finish, like a touch of yellow lemon.

Herbert & Co

While running the family estate—Champagne Didier Herbert—Thomas Herbert and his partner, Marie-Charlotte, decided to create a second brand using Chardonnay, Pinot Noir, and Meunier vines located in Rilly-la-Montagne, Ludes, Trois-Puits, Verzenay, and Mailly. Ten years ago, they harvested their first crop, followed by nine months of aging in 228-liter Burgundy barrels and several years on the lees. The result was a range with a distinctive color scheme—blue—featuring seven wines, each produced in quantities not exceeding 2,000 bottles.
