Certainly, the initial aromas are ripe, but without going overboard, thanks to fresh notes of country flowers, crumpled grass and chalk. The palate is much rounder, with a sweetness reminiscent of acacia flowers. A hesitant side between sweetness, unctuous bubbles and lemony tension that continues through to the finish on small bitters.

Herbert & Co

While running the family estate—Champagne Didier Herbert—Thomas Herbert and his partner, Marie-Charlotte, decided to create a second brand using Chardonnay, Pinot Noir, and Meunier vines located in Rilly-la-Montagne, Ludes, Trois-Puits, Verzenay, and Mailly. Ten years ago, they harvested their first crop, followed by nine months of aging in 228-liter Burgundy barrels and several years on the lees. The result was a range with a distinctive color scheme—blue—featuring seven wines, each produced in quantities not exceeding 2,000 bottles.
