The mousse is abundant and the nose marked by the power of the Pinot Noir grapes from the Aÿ terroir used exclusively in this cuvée. The winey, ripe palate, with its justified extra brut dosage, is sappy, with notes of encaustic and walnut. Best served with a 24-month Comté cheese.

H. Goutorbe Père et Fils
Based in Aÿ, the company was developed in the 1970s under the impetus of René Goutorbe, in the wake of the famous nursery created by Emile after the 1914-1918 war. Backed by his children Elisabeth, Bertrand and Étienne since 2007, René now farms 22 hectares, with a high proportion of Pinot Noir grapes to produce fruity, vinous champagnes. The house offers the opportunity to buy old vintages in small quantities. It also owns the Castel Jeanson*** hotel, created in 2004 in a charming 19th-century residence.
