The nose needs oxygen and then... candied lemon peel, white flowers, spices, leather and notes of mushroom, undergrowth and humus. The attack on the palate is powerful, with discreet bubbles. The body is fairly fleshy, and the spicy retro-olfaction leads us towards exotic fruits. The finish, still a little marked by its ageing in wood, offers a lovely length on yellow fruits. Best served with an exotic dish.

Gabriel-Pagin Fils

Maison Gabriel-Pagin, run by father-and-son winemaker-manipulants since 1946, covers 9.50 ha on the Grand Cru and Premier Cru terroirs of Avenay-Val-d'Or, Mutigny, Avize and Cramant. All the region's main grape varieties are grown here, with Pinot Noir predominating (80%). Here, integrated viticulture raisonnée is based on certain principles: ploughed vines, no chemical weeding, minimal must treatment, no yeasting, spontaneous alcoholic and malolactic fermentation, vinification in wood and long cellar ageing. The range is relatively narrow, but well thought-out and homogeneous.
