100% pinot noir for this champagne from Avenay-Val-d'Or. The color is a deep amber. On the nose, aromas of very ripe apples, beeswax and roasted fruit dominate. On the palate, the wine is a little fresher than the nose would suggest, but the flavors remain strong. This is a perfectly crafted, historic-style champagne, uniquely gastronomic.

Gabriel-Pagin Fils

Maison Gabriel-Pagin, run by father-and-son winemaker-manipulants since 1946, covers 9.50 ha on the Grand Cru and Premier Cru terroirs of Avenay-Val-d'Or, Mutigny, Avize and Cramant. All the region's main grape varieties are grown here, with Pinot Noir predominating (80%). Here, integrated viticulture raisonnée is based on certain principles: ploughed vines, no chemical weeding, minimal must treatment, no yeasting, spontaneous alcoholic and malolactic fermentation, vinification in wood and long cellar ageing. The range is relatively narrow, but well thought-out and homogeneous.
