This plot-based Pinot Noir cuvée is entirely barrel-fermented and cultivated according to biodynamic principles. The woody nose presents luscious aromas of mocha, sweet spices (turmeric) and sandalwood. The palate builds on the woody structure, but the chalky freshness takes over and accompanies iodine notes right through to the appetizing finish, which calls for another glass. A singular champagne to serve as a starter with game pâté en croûte.

Located on the prestigious Avenue de Champagne in Epernay, the domain owns 9 hectares of vines located mainly in the village of Écueil. For more than 80 years, the women of the family have run the estate, and since 1997 Elodie has been implementing traditional viticulture methods (horse plowing, vinification in barrels and casks). A guest apartment that can accommodate 7 people is available to rent for exploring the region.
