This 100% Pinot Meunier contains 50% wine from 20-year-old Solera vines. The fine, abundant bubbles produce a rhythmic effervescence. The ample nose reveals aromas of candied white fruit, punctuated by notes of brioche and caramel. On the palate, the attack is frank, rich, vinous and chalky. Open as an aperitif or with roast veal from Ségala, stuffed with kidneys and parsnip purée.
