With marked golden highlights, the nose smells like a boulangerie, with stone fruit tarts, and dark black currant berries. The soufflée mousse meets the sweetly concentrated palate of fruit compote, strongly gourmet but retains freshness, with minerals and sandy salinity, all heightened by the crips sweetness, and a feeling that agrumes want to come out at the end. For the table and even with a fruity dessert.
