Champagne Collery
The century-old champagne brand was given a fresh start by Jean, who became president of the Reims Mountain Regional Nature Park in 1974. As for Alain, he pioneered wine tourism by creating a champagne museum in Aÿ. Today, the house offers haute-couture cuvées: "NV", aged for five years in bottle, with the house dosage liqueur aged for a year in Sauternes barrels; "Blanc de Noirs", aged for seven years in bottle, with the dosage liqueur aged for a year in Burgundy barrels; and "Ratafia", aged according to the solera principle, with 30% of the previous year's wines, and aged for a year in Sauternes and cognac barrels.
