Discreet and elegant, the nose reveals itself little by little, as one discovers a personality in the course of a conversation. Fragrant notes reminiscent of iris root and old rose, as well as more citrusy aromas of thyme and green oak, intermingle and respond to each other. The palate is in the same mood, with the bubbles building in power, before a finish of toasted bread and pretty bitters.

The Philbert champagne house, founded in 1923 in Rilly-la-Montagne, cultivates just under 10 hectares of HVE and herbicide-free vines. Since 2021, Yannick Dubois has been running the house, perpetuating family know-how since the late 19th century, with respect for the terroir of the Montagne de Reims. It vinifies around 35,000 bottles a year, made from chardonnay, pinot noir and meunier on premier cru terroirs. The estate prefers to block malolactic fermentation to preserve freshness.
