The Philbert champagne house, founded in 1923 in Rilly-la-Montagne, cultivates just under 10 hectares of HVE and herbicide-free vines. Since 2021, Yannick Dubois has been running the house, perpetuating family know-how since the late 19th century, with respect for the terroir of the Montagne de Reims. It vinifies around 35,000 bottles a year, made from chardonnay, pinot noir and meunier on premier cru terroirs. The estate prefers to block malolactic fermentation to preserve freshness.
