Once again, Benoît Cocteaux's dosage is meticulous, in a version of fine tenderness, balance, fruit, structure and salinity. Seductive yet elegant. Rose, citrus, gentian, cherry and liquorice are all present. Open as an aperitif, of course, but also with a just-grilled onglet.
