The wine as a whole seems quite young, but you can sense the winemaker's skill and his desire to offer straightforward, unpretentious wines that sometimes destabilize us. We'll need to wait a few years for the chalky texture to integrate, and the patina of time will allow us to match it with poultry in cream sauce.
