The color is gold with silver highlights. The bubbles are fine and impetuous, forming a creamy mousse when served, but which soon evanesces. The nose is fine, with aromas of lemon cake, apple, pear and rhubarb. On aeration, a hint of graphite and white pepper give the wine depth. The attack is supple, with grapefruit zest. The wine then loses its intensity, ending on a mineral finish. This is undoubtedly a champagne for aperitifs, but dare to try some fine oysters for a seafood pairing.
