Gourmet Restaurant A 4-star hotel on the Swiss border, this chalet in the heart of nature is the domain of Pascal Charreyras. The chef's cuisine is both bourgeois and terroir-based, with an emphasis on fine produce. Having worked with Loiseau and Marcon, the chef's tried-and-tested technique is evident in such fine dishes as line-caught sea bass cooked on its skin with braised sucrine and rock fish jus, and roast pork filet with herb and rosemary crust.
