Remarkable Restaurant The Pressoir is silver, the decor sumptuous, the prices royal. You can feel the money, the luxury, and the clientele, both residents and visitors, really appreciate this "entre soi" which continues at the table in a palatial atmosphere. The last evening was a lively affair, with the staff perfectly briefed by Kevin Quinsenac, who also manages the large Bordeaux cellar, and a well-ordered brigade delivering top-notch dishes: oysters grattons de Lormont béarnaise with tarragon-scented siphon, pig jus and tarragon oil, langoustines harissa consommé well seasoned and perfumed with grated hiomi (the Cameroon garlic tree), gourmand and canaille porc gascon maturé, côte rôtie, ventrêche à la cendre, confit pork belly with Espelette chili condiment, voile de lard de porc noir, pomme de terre sarladaise cooked in pig fat, pickles, jus de cochon au boudin... A flawless dessert of dark chocolate and Madagascar milk chocolate, smoked hazelnut emulsion, black garlic confit, olive oil ice cream, topped with a chocolate-black garlic sauce. Over 1,000 references with the great Bordelais.
