Chef's Restaurant This prestigious establishment (hotel 5*****) in the heart of the Massif de la Clape, halfway between town and sea, is located on one of Gérard Bertrand's wine estates, Château l'Hospitalet. His gourmet restaurant "l'Art de Vivre" (there's also a rotisserie open between October and May, "chez Paule") faces the vineyards, in a room with a contemporary decor, spacious, comfortable and bright. The kitchen has made further progress. The dishes prepared by young chef Laurent Chabert, based on local produce (and even estate-grown herbs, certain vegetables and fruit), combine naturalness, inventiveness, precision, great technique and meticulous preparation, sometimes resulting in three toques. Great moments like this brined, poached and snacked Mont-Royal pigeon, bell pepper piperade, taggiasche olives, reduced juice salmis-style, or this flame-grilled Mediterranean mackerel, tomato confit, almond and fresh almond espuma, aguachile. Starters and desserts are almost at the same level, with many thoughtful touches (appetizer bites, amuse-bouche, sorbet between fish and meat, pre-dessert, mignardises, numerous breads, olive oil, marjoram emulsified butter, etc.) and are an integral part of the journey. The local cheese platter is worth a look, a forkful and the extra €25 (especially as you can share a plate for two...). If the two menus (5 or 7 courses) weren't hidden, we'd probably already have three toques. An extensive wine list, almost all from Gérard Bertrand's top vineyards, at attractive prices. Great selection by the glass, and relevant food and wine pairings. Overall, the service is young and adorable, and worthy of the place, despite a few inaccuracies quickly forgiven thanks to the kindness and motivation of all the staff.
