Chef's Restaurant Gérard Bertrand's immense estate, which encompasses several dozen hectares of vineyards, a luxury hotel with spa, event facilities, a putting game and, of course, a host of wine tourism activities, is counting on the table run by Laurent Chabert to make the brand shine in the eyes of a public with a taste for the finer things in life. Once you've found the right door (at night, the signs aren't very clear), you'll discover a vast, airy space, with well-spaced tables and a panoramic view over the vineyards (at night, it's enhanced by skilful lighting). In the kitchen, Laurent Chabert chooses to promote local produce and the Mediterranean, and his fine technique does the rest: zucchini flowers stuffed with Mediterranean red shrimp, lemon confit, chervil, shrimp bisque reduction and nettle coulis, Mediterranean grouper marinated in citrus and barbecued on the skin, fava bean stew (from the estate's farm), white strawberries, aillet and Laos pepper, chevreau en déclinaison and artichoke in different textures before a dessert featuring strawberries from Saint-André-de-Roquelongue (Gérard Bertrand's native village) served in olive oil salad with white chocolate ganache, wasabi, arugula and pistachio sponge cake, strawberry tuile and strawberry sorbet. The cellar is mainly devoted to estate wines, of course, and the service is top-notch.
