Presentation

"From the age of 5 or 6, I wanted to cook," confides Laurent Chabert. He completed his apprenticeship at the Auberge de l'Olive, in the Allier region, with chef Michel Corbet. He completed his training with a vocational diploma at Michel Sabot's La Colombière restaurant in Abrest (Allier). In 2006, he spent several seasons with the Trincaz family at Les Gentianettes, in the Vallée d'Abondance: "We already had responsibilities. He started out as a commis, and quickly rose to chef de partie, eventually becoming second chef in his second year.

In 2008, Laurent Chabert was second in Antony Tempesta's kitchen at La Becca (Val-d'Isère). In 2012, he moved to Corsica with chef Julien Marseault, at U Santa Marina. The following year, he joined Jerry Monmessin's team at Le Pirate, Erbalunga.

At the end of 2013, Laurent Chabert took up the post of chef at L'Art de Vivre restaurant at Château L'Hospitalet, Gérard Bertrand's wine estate: "He gave me a chance. "A place where the cuisine is described as "vertical": "a cuisine that comes from the ground, to reach the heavens". With local sourcing and a biodynamic garden, L'Art de Vivre definitely lives up to its name.
