Description
Sponsored Nicolas Ramos recently took over this establishment in the heart of a charming little village, after an extensive career ranging from traditional to gastronomic, from brasserie to top chef's table, in restaurants in France and abroad. The fruit of his cooking, which he describes as "true, honest and instinctive", is served in the dining room by his wife and partner, Veronika. On a short menu, the low-temperature egg and its seasonal accompaniment, braised beef cheek and Pavlova often feature prominently. And let's not forget the local staples: Montbéliard beef and Morteau sausage. And to sublimate these varied dishes, including appetizers and mignardises, the wine list shows a preference for local references (Jura) and those from Alsace or Burgundy. For all these reasons, and to the surprise of the couple themselves, some customers travel thirty kilometers or so to enjoy L'Aquarelle, its warm welcome and gift vouchers.
