Alexandre BAUMARD
Chef : 1 restaurantAlexandre Baumard enthusiastically recalls his beginnings. He was introduced to cooking by his entrepreneur father. Every Sunday, they would cook whatever they could find at the market, even "challenging" each other at the stove. "For me, cooking has always been a time for sharing and conviviality with the family", explains the chef. After an internship with his uncle, a restaurateur in Angers, he began his training in Saumur.
He followed this up with internships at Choiseul, Amboise, and Château de Divonne-les-Bains, with Benoît Vidal, before settling down for three years with Paul Bocuse, his first mentor. "He was an extraordinary man, a bit like a benevolent father," recalls Alexandre Baumard. He then continued his career with Christophe Bacquié, first at La Villa Calvi, then at the Hôtel du Castellet."I wanted to settle down, and it was thanks to Christophe Bacquié that I found myself in 2014 at Logis de la Cadène, the historic bistro in the village of Saint-Émilion."2 toques quickly followed by a 3rd a few years later. He also took over the kitchen reins at L'Observatoire du Gabriel in Bordeaux. In a different place, with a different atmosphere, the restaurant quickly won 3 toques. A further accolade came in 2021, when Gault&Millau awarded Alexandre Baumard the Grand de Demain trophy.
