Remarkable Restaurant Is the chef in? "Yes, yes, he's at the bistro... ". You'll have to translate: no, Thomas Collomb isn't playing dominoes over a Ricard at the local bar-tabac, he's a passionate and conscientious owner who looks after both the excellent Bistrot Lucien, in the same building, and his gastronomic Table d'Hôtes in this beautiful vaulted upstairs room with exposed beams, rough brick and cement walls, in a very refined rustic elegance. The cuisine of this charismatic chef, who has done so much for Dijon's gastronomy (La Maison des Cariatides in its early days, the handover to Angelo Ferrigno, and finally the takeover of this institution to revive a great history) is as mischievously gourmet, rooted and personal as ever. With real flashes of brilliance, such as the unexpected marriage of asparagus and rhubarb, supported by tagetes, a seemingly modest starter whose finesse, melt-in-your-mouth texture and slightly sweet-savory marriage, like a fruity earth, sweeps you off your feet. Crisenon trout, spinach and fermented turnip gel is more conventional and quite pleasant, before a school pigeon, exactly as we like it, roasted chest, confit leg, pigeon jus with a touch of garlic purée, giblet tartine and impeccable potato purée, both smooth and consistent. We finish with a light strawberry livèche dessert - a technically very clean sequence at a very attractive price (€62 for lunch, €102 for dinner). A very strongly Burgundian cellar, compiling all the great names, modern and old, and above all offering a very wide range of prices, offering pleasure from €30-40 with generics well chosen by Bastien, an eloquent and erudite young sommelier.
