Gourmet Restaurant In the Toulouse countryside, this magnificent stately home dating from 1774 is now a 4-star Relais & Châteaux hotel, with spa, gardens and luxury. To accompany the excellence of this chateau experience, with its perfectly respected spirit of crystal chandeliers, Louis XV seating, moldings and silverware, the address called on Piedmontese chef Gabriele Ferri (since replaced by Hippolyte Peters), who offers a Franco-Italian cuisine of the finest blend. The products are beautiful and the execution is worthy of the fare, on a risotto carnaroli with mushrooms, Escanecrabe snails and Bigorre bacon, an open raviole with bouchot mussels, zucchini and pistachios, gorgonzola velouté and shredded bottarga, an 8-hour lamb shoulder with smoked eel salpicon, cauliflower and beluga lentils, or a honey-glazed seasonal fruit pavlova with mascarpone and sesame cream.
