Remarkable Restaurant This is undoubtedly one of the finest hotels in the region, both a journey through time and an architectural masterpiece. The superb 1930 building has retained its Art Deco lines, much to the delight of aesthetes, who can extend the moment at Wilfrid Chaplain's table, in a more refined vein. The chef's taste for the terroir is reflected in his beautifully presented plates, as if to mark the continuity of a house committed to the idea of beauty. You'll be able to discover the Auvergne duck foie gras pain perdu in a fine tartlet, sliced dried fruit vinaigrette and quince marmalade, monkfish from Brittany, monkfish cheek accra, ashy carrot and burnt leek, velouté and condiment with Cesset organic saffron, supremes of Racan pigeon cooked on the skin, ailerons simmered in open crêpe raviole, cardamom jus and Marsat green apple condiment, or a dessert featuring pear, baba cookie, verbena and lemon. Formulas from €63 to €125. Very fine cellar.
